Chicken sausages with peppers and onions is an easy 3 ingredient, one pan dish, perfect for a quick weeknight meal.
It had been a long day. I popped in to the butchers on my way home and they had these freshly prepared chicken sausages. Made with parsley, garlic and spices, the butcher insisted I try them, so I bought a couple of kilos (we have teenagers).
This really is such a lazy dish as you just need 3 ingredients: the sausages, onions and peppers, one skillet, and you’re good to go. As the sausages cook, the juices coat the vegetables.
I served this with some bread on the side and a salad with a simple vinaigrette.
Not only was it super quick to make, the house smelled amazing afterwards!
Chicken sausages with peppers
- 1 tablespoon mild olive oil or sunflower oil
- 2 finely sliced red onions
- 1 red bell pepper sliced
- 1 kg chicken sausages
Heat the oven to 425F/220C. In a large skillet, on medium-high heat, heat the oil and brown the sausages all over, then remove from pan and set aside. In the same oil, fry the onions till golden and season. Add the peppers and sauté for 1 minute. Return the sausages to the pan and place in the oven for 7-10 minutes, or till the sausages are cooked through.
This dish will keep in the fridge for a couple of days.
