Ingredients
Here’s what you will need:
- oats – either steel cut or rolled oats
- water
- whole milk – for creaminess
- sugar
- pinch of salt – doesn’t actually make it salty, just enhances the flavour.
Steel cut vs rolled oats
So whats the difference between steel cut oats and rolled oats?
They are the least processed oats on the market having similar health benefits, however steel cut oats are lower in the glycemic index and therefore will keep you feeling full for longer.
Do you need to soak oats overnight?
Oats do not require soaking overnight and can be cooked straight from the packet.
Tips for making porridge
Toasting the oats first brings out a delicious nutty flavour. Some people also add a pinch of salt but if you are adding sweet garnishes it isn’t necessary.
Water or milk?
You could use water to cook the oats, just milk, or a combination of water and milk. Adding milk gives a lovely creamy richness to the porridge, and makes it more dense.
How to make it
- Toast the oats in a warm skillet.
- Transfer the oats to a small saucepan, adding the water and milk (and salt if using) and stir.
- Bring to a boil then reduce heat and simmer for around 5 minutes, stirring continuously.
- Turn off the heat and cover, allowing to steam for another 5 minutes.
Porridge will thicken slightly on cooling so you may wish to add some milk to loosed it slightly.
Ideas for garnishes
Allow the porridge to cool slightly before adding fresh fruit or add any of these delicious combinations:
- baked bananas with a sprinkling of demarara sugar
- caramelized apples with cinnamon, honey and crème fraîche.
- honey roasted pecans
- bliss balls
- chopped dates or prunes
- figs or mango purée and cardamom
- peanut butter and strawberries
- maple syrup and a small knob of butter
- pumpkin purée and sunflower seeds
- pomegranate seeds and pistachio nuts
- fresh berries
- honey
- nutella
- Nut butter, seeds and and crushed nuts

How To Make Creamy Porridge
Ingredients
- jumbo oats - 1 cup 80 grams
- water - 2 cups 450 millilitres
- milk - ½ cup 120 millilitres
- pinch of salt - optional
Instructions
- 80 grams jumbo oatsHeat a small skillet over medium heat and toast the oats till they are fragrant.
- 450 millilitres water, 120 millilitres milk, pinch of saltTransfer the oats to a small saucepan, and on medium heat, add the water, milk (and salt if using) and stir.
- Bring to a boil, then reduce heat and simmer, stirring continuously. After approximately 5 minutes, or once the porridge looks creamy and has the desired consistency, turn off the heat and cover allowing to steam for another 5 minutes. Garnish as you wish.
