They are so easy to make, and are great way to engage the kids over the holidays. Feel free to tweak the recipe as you wish, adding chopped walnuts, dried cranberries or raspberries to the mix.
To blend ingredients easily, make sure the eggs are at room temperature, and are lightly beaten. The dry ingredients should be gently folded into the mixture, so there is no need for an electric blender for this recipe.
Grease your baking pan, even if it is non-stick, and then dust with a thin layer of flour. This double precaution is necessary as when the sugar melts, it caramelises near the surface of the hot pan. After cooking, when it cools, the sugar will solidify and will stick to the surface. So, the dusting creates an extra non-stick layer between the mixture and the pan.
Finally, allow to cool before slicing to achieve a clean cut. Enjoy!
- ½ cup butter
- 1 cup sugar
- 1 teaspoon vanilla essence
- 2 eggs lightly beaten
- ½ cup flour
- ⅓ cup unsweetened cocoa powder
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- Preheat oven to 350°F/175°C Grease and flour an 8-inch square pan. Separately, in a small saucepan, melt the butter and remove from the heat. Using a wooden spoon, stir in the sugar, followed by the eggs and vanilla. Add the cocoa powder, flour, salt and baking powder and gently stir. Pour the mixture into the baking pan and bake for 25 minutes.
