An easy, sweet and tart lemon icing to drizzle over muffins, cakes or cookies. No cooking required!
This icing is thin and glossy and is perfect to drizzle over cakes, muffins, pastries, sweet breads, or cookies. I love that it only takes a few minutes to make and adds a lovely sweet tanginess to a dessert. You only need 6 ingredients: confectioner’s sugar, butter, vanilla, salt, lemon juice and only a small amount of milk (careful though – any more and your icing will curdle). The pinch of salt helps to accentuate the flavours.
Simply mix all the ingredients together and beat till smooth and creamy. Then use straight away, before it hardens.
Make this icing after your banana bread has had a chance to cool, then drizzle it straight away to form a thin, almost transparent glaze. Then serve your dessert immediately.
The citrus lemon gives a wonderful fresh taste, but you might want to change the flavour to go with other desserts. In that case, you could substitute the lemon juice for a teaspoon of espresso coffee, almond extract, or orange zest.
For an artistic flare, consider making separate batches of icing, mixed with a few drops of food colouring.

- 1 cup confectioner's sugar
- 1/3 cup melted butter
- 1/3 cup lemon juice
- 1/2 teaspoon vanilla essence
- 2 teaspoons milk
- a pinch of salt
